Three-Cup Chicken is a popular Taiwan recipe, and it was called as such because of its 3 main ingredients measured in equal ratio: soy sauce, sesame oil and chinese rice wine (shaoxing wine).   You will also need garlic and ginger and of course, the chicken (I prefer the breast fillet part), and you’re good to go.

The exact ingredients are as follows:

  • 1/2 cup sesame oil, divided
  • 1/2 cup soy sauce (you can use light soy sauce if you want it to be less salty)
  • 1/2 cup chinese rice wine (shaoxing wine)
  • 2-3 tablespoons sugar
  • 2 tablespoons ginger slices
  • cloves from 1 bulb garlic, peeled
  • 3 cups chicken breast, cubed
  • fried basil for garnish

Step 1:  Heat 1 teaspoon sesame oil.  Fry ginger slices until browned.  Step 2:   Boil together soy sauce, rice wine, sugar and garlic until reduced by half.

Step 3:  Add remaining sesame oil and chicken cubes.  Boil for 10-12 minutes or until reduced by half again.     Step 4:  Garnish with fried basil and serve.
